I love a new trend and Superfood Cocktails have been slowly making their debut on bar menus across the country. When I was back visiting the west coast last month, I saw more than one Superfood Cocktail offering- which is a cocktail made with healthy ingredients such as kale, cucumbers, beets, watercress, Acai, ginger, coconut water, blueberries, chia seeds, etc... You get the idea.
I wanted to try my hand at a Superfood Cocktail and asked for help from my friend and food stylist and Culinary Producer, Vanessa Parker McIntyre. She was more than gracious to supply the ingredients and her friend, Julia Merrill Bell opened up her amazing kitchen to us. Together, we decided to make an Iced Green Tea Mojito.
Made with rum, this cocktail also includes lots of greens- like arugula, limes, mint and green tea. Lime and mint help with digestion, Arugula has a plethora of phytochemicals proven to combat cancer, while green tea is chock full of antioxidants and nutrients. Vanessa noted how as we sipped this cocktail, the flavor changed the closer we got to the arugula on the bottom...
This drink is delicious. We all decided we would make it again in our own homes as, like an iced green tea, it's really refreshing but we can't help but love the extra kick of greens and rum. Yum. Find the recipe, here.
Funny enough, on my travels back from the west coast, I saw this article in the American Way in-flight magazine. It listed some popular Superfood Cocktails at bars in LA, Denver and at The Lazy Goat in Greenville, South Carolina. Keep an eye out at your local bar for one or even better, try concocting a cocktail with your favorite foods rich in vitamins and antioxidants this weekend. After all, being able to say 'It's good for you,' is a fun twist, don't you think?
